Dalcha

Dalcha, also called pumpkin Dalcha, is an Indian dal-based curry that starts in Hyderabad, Telangana, India. The main ingredients are mutton, lentils, and tamarind. Vegetables can also be added to the stew. Dalcha is traditionally served with a rice dish called Bagara Khana. Dalcha is traditionally made with mutton, however, chicken can be used as alternative meat.

Ingredients: The ingredients needed to make kebab biryani are as follows:


Half a kg

Meat

1 cup

Lentils (boil)

2 pieces

Eggplant (cut into squares)

2 pieces

Potatoes (cut into squares)

1 piece 

Pumpkin (cut into squares)

1 cup

tamarind pulp

4 pieces

Tomatoes (chop)

1 piece

Onion (chop)

2 tablespoons

crushed garlic ginger

2 tablespoons

crushed red pepper

1 teaspoon

Crushed turmeric

Half a cup

Oil

1 tsp

Crushed hot spices

1 teaspoon

Crushed cumin

1 teaspoon

Mustard seeds

3 stalks

Curry leaves

5  red chilies

According to taste

Salt



METHOD:

1. Heat oil in a saucepan, add onion, ginger, garlic, meat, and water as required and leave to thaw.

2. When the meat is melted, add salt, red pepper, turmeric, and hot spices and fry well.

3. Add all the vegetables and lentils to the roasted meat and let it cook.

4. When the vegetables are melted, add tamarind pulp and cook for 2 to 3 minutes.

5. Heat a little oil in a frying pan, add mustard seeds, curry leaves, and red chilies to prepare steam and add to the pan.

More dal is ready, serve with hot bread.

Presentation:

Drain the rice in a spread dish over the edges and spread the chicken mixture in the middle. Garnish with fried almonds on top.
